Darina Allen one of Ireland's best known chefs, a TV Host and a cookbook author has written many books, including Irish Traditional Cooking. Her cooking school is Ballymaloe in County Cork. The food in Ireland has become incredible, and much of that is due to Darina Allen. Then, our sommelier, Maureen Petrosky, talks us through pairing traditional Irish foods such as corned beef and cabbage with wine. Maureen Petrosky is the author of The Wine Club.
