Let's dive in!Ingredients:16 oz (1 can each) cannellini beans, kidney beans, and garbanzo beans (drained and rinsed)1 English cucumber, sliced2 heirloom tomatoes, chopped1 small red onion, thickly slicedSalt & pepper to taste1/4 cup of your favorite dressing or vinaigrette (get creative!)Optional AdditionsRomesco sauce (recipe below) for extra flavorInstructionsCombine the ingredients:In a large mixing bowl, toss the cannellini, kidney, and garbanzo beans with the cucumber, heirloom tomatoes, and red onion.Season:Add salt and pepper to taste.Dress the salad:Drizzle 1/4 cup of your preferred dressing or vinaigrette. They’re gearing up for their annual Coffee for a Cure event, happening this Friday, October 18th, where 100% of the proceeds will go to the Hearst Cancer Resource Center at French Hospital. You’ll hear the lively coffee shop atmosphere as we discuss how your daily caffeine fix can help support local breast cancer patients.

    Later in the show, we catch up with Jeff Faber from Opolo Winery, which is celebrating 25 years of winemaking in Paso Robles. We talk about their evolution over the years, what it’s like to hit such a major milestone, and the unforgettable harvest party they’re hosting this weekend. Known for their soulful and uplifting sound, Próxima Parada has been making waves in the music scene, amassing over a million monthly listeners on Spotify. Their hit song, “Musta Been a Ghost,” went viral last year thanks to a single TikTok video, leading to the song becoming the #1 most viral track in the U.S. and several other countries. Nico shares how that unexpected breakout moment transformed the band’s trajectory and ushered them into an already growing spotlight.

    Nico also talks about the band’s recent decision to take a break from touring this fall to reflect and recharge, as well as his upcoming solo show in Spain this November.
